Bollinger's NV Brut Special Cuvée is one of the best known and most distinctive of all non-vintage champagnes. Bollinger use a high proportion of Pinot Noir in the blend (60%), and much of the reserve wine is aged in magnums - something the house insists adds to the complexity and depth of the wine. The Bollinger penchant for oak is on stylish display in this cuvée, and the warm brioche notes wrap around a deep orchard fruit core making for one of the most satisfying glasses of Champagne. 85% of the blend is drawn from vineyards classified grand cru – the style is deliciously weighted and seamlessly balanced.Lovely aromas and flavors of ripe black cherry and currant fruit, graphite, toast and candied Meyer lemon zest are set in this racy Champagne, with a refined, finely detailed mousse. The mouthwatering finish is long and spicy.
