This whiskey was matured in a first-fill bourbon cask. Laying a smooth, sweet foundation of vanilla, honey, butterscotch and toffee flavours. It was then transferred into a French oak calvados XO cask. This cask had previously held apple brandy for over six years, steeping it in orchard fruit flavours, while the French oak itself comes through with characteristic, beautifully-complex woody spices.

This whiskey was matured in a first-fill bourbon cask. Laying a smooth, sweet foundation of vanilla, honey and butterscotch flavours. It was then transferred into a grand cru Burgundy cask. Steeped in full-bodied pinot noir wine, this cask added rich berry notes, a slight earthiness and the beautifully complex woody spices of French Oak.

Harvested and pressed at -8°C the Pinot Noir icewine has wonderful flavours of dried peach, apricot and exotic mango. The intense sweetness and full body makes the Pinot Noir a peerless dessert-wine.
